Shipping Information

We ship our ice cream within insulated coolers filled with dry ice. Each package is in transit for between one and three days depending on the recipients location. Please select up to five total pints or more to complete your case before checking out.

Tangy, Tropical, To Die For

Marco Thai Coco-Lime is a classic example of the whole being more than the sum of its parts. The three flavor points, coconut, lime, and chile, combine to form a profile that’s as captivating as it is unique. Easily our most “angular” flavor, you can taste each of these three components very clearly in the context of the whole experience. The rich roundness of the coconut soothes, the sharp note of lime brightens, and the spike of chile creates an excitement; each ingredient pushes the edges of its own boundaries and tries to lure you away from the other two.

One thing that may surprise you is the chile. While it’s not a “Thai” chile, we chose the Korean gochugaru for its fruity friendliness–we are big fans of both spice and of Thai cuisine here at Marco, but the chiles themselves can be a little too savory and aggressive for ice cream! We were very pleased by the expression of gochugaru and find the combination as a whole to have a very Thai feel.

Pairings:

While it might be obvious to pair this with Thai cuisine, we are big fans of having Thai Coco-Lime for dessert after an Argentine steak dinner. The coconut’s unctuousness follows the richness of the steak perfectly, and the tart, juicy lime angle echoes the chimichurri which was undoubtedly on your steak! All the while, the spice keeps things bright and lifted.

For dessert, try it next to a piece of passionfruit tart, for a last moment of vibrant and captivating flavor at the end of a meal.
